50 Recipes Challenge: 1-5

So, here are the first 5 out of the 50 recipe challenge I’ve set for myself. As with books, there’s some ‘back catalogue’ included. Still, it is encouraging me to try new recipes. I’ll include a link if the recipe is online or type it out if it isn’t.

Apple cinnamon muffins – I made these in January when
maladroitoracle was visiting (don’t worry sweetie I’ll totally post that awesome curry recipe as well!). The recipe is from a ‘Woman’s Weekly’ booklet on muffins that I picked up from a book sale. The results were tasty if nothing spectacular. What I would say is that at least double, if not triple the amount of apple or add e.g. nuts or dried fruit or other spices, because as it is the muffins were quite plain and I couldn’t taste the apple much. Still, quick and easy.
(makes ~ 16)
300g self-raising flour
150g plain flour
1 tsp bicarbonate of soda
200g brown sugar
2 eggs
375ml milk
180m vegetable oil
2 tsp ground cinnamon
210g finely chopped apple
Topping:
50g brown sugar
35g plain flour
40g butter
Preheat oven to 200C (Gas 6). Grease a muffin pan. Stir dry ingredients plus 2/3 of the apple together, mix the wet ingredients together first and then add to the dry. Stir everything just enough that the batter is even, spoon into the tic, top with rest of the apple and the topping.
Greek roast lamb - I’ve made this last two Easters and there is a good chance that I’ll make it next Easter as well. Easy and delicious. Depending on the oven I would say at least double the roasting time though. And don’t think you can put the potatoes in the last minute but put them in from the start like instructed. I’m not a fan of kalamata olives so I either use none or green ones for the sauce, works just fine.
Griddled marinated aubergine with feta & herbs - Tried the recommended side last Easter too. I had no griddle to use but normal frying pan worked fine. The results were yummy and I really enjoyed these cold as well the next day.
Pork or lamb ‘vindaloo’ - This is from Madhur Jaffrey’s book 100 Essential Curries which seems to be available via Google Books for the most part but to be fair I picked up the book for like £3 from my local supermarket and can guarantee that it was £3 well spent.
pushkin666 and I made this earlier in the year using chicken and it was super delicious eaten with basmati rice and some naan bread. Highly recommended! Really need to test more of the recipes from the book.
1 ½ tbsp grainy French mustard
1 ½ tsp ground cumin
¼ tsp ground turmeric
½-1 tsp chilli powder
1 tsp salt
1 tsp red wine vinegar
100g onions cut into fine half-rings
6 garlic gloves crushed
3 tbsp vegetable oil
550g bones hand of pork or shoulder of lamb, cut into cubes (worked well with chicken too)
150ml of coconut milk
250ml water
Combine mustard, spices, salt and vinegar in a cup, mix well. Brown the onion on a hot pan, add garlic and the spice paste soon after. Stir fry for a minute, add meat and stir fry from 3mins. Add the coconut milk and water. Bring to boil, cover, reduce heat until just simmering and leave to cook on low for 60-70mins.
Rhubarb puffs with oaty streusel topping – I made this as I had an excess of rhubarb and was bored with compote and crumble (though saying that, I still ended up making a small crumble with rhubarb and dried plums which was a delicious combination which I would recommend). Not hugely impressed with the results though as these were pretty boring just following the recipe. Don’t be prudent with the rhubarb but pile it high. I would also add some jam as these were quite dry, and I would glaze the pastries with egg and sugar too.
